Keeping Focussed is Important

How do you like the idea of a Salad Bar Party for the ladies? Anything to keep you from going out to restaurants this early in the game until you learn what to order and what to avoid.

Salad Bar Party

Well folks,
My sister and I have been talking on the phone while she struggled to get her computer back online. But that hasn't helped you, so I'll post my first email to her here, and then later try to remember my tips for her over the last week and post them.

Salad Bar Party for the Ladies

NO BACON BITS... NO AVOCADO... NO NUTS... NO CHEESE

The host supplies 1 bottle of FF salad dressing,
the lettuce base (NO ICEBURG please, or at least not much),
tomato chunks
diced red onion
1 hardboiled egg
(Yes, only 1 for all 4...slice and top each persons' salad individually).

Ideas for the lettuce base:
Romain, red leaf, bibb, spinach, arugula, radicchio, endive, red cabbage, etc. or buy a bag or 2 of mixed spring greens.

Each guest brings a bottle of FF dressing(a different kind each party, so everyone gets to try new ones each time...and yes you take home the one you bring unless someone wants to trade.)
+ 4 various salad ingredients.

For the guest ingredients, you'll have to co-ordinate so there are no duplicates. They can prepare them at home or it's more fun to bring whole and prepare around the table sipping Green Tea... not wine, (and someone I know has a new slicer-dicer perfect for this).

Each person builds their own salad and any leftovers get divided into doggie bags. So bring plenty of glad sandwich bags so you can put each leftover ingredient in 4 separate bags (if there are 4 of you). If you put all ingredients in just 4 doggie bags, it would get all limp and only last about a day...each ingredient in separate bags lets you build a nice fresh salad for days.

Variious Ideas:
Fresh:
cucumbers, shredded carrots, sl mushrooms,
bell peppers, green onions, thin sl radishes, asparagus
zuccini or summer squash, alfalfa sprouts,
diced apple, pears, raisins, dried cranberries, grapes (halved)

Canned:
Chick Peas,red, white or black beans,(be sure to drain & rinse well),
sl pickled beets, mandarin orange sections, baby corn,
hearts of palm, artichoke hearts, green or white asparagus,
dried sundried tomatoes (not from oil packed),
bamboo shoots, water chestnuts, roasted red bell peppers

Optional fruit salad part of the salad bar:
FF cottage cheese, FF yogurt, mandarin orange sections,
apples, pears, strawberries, blueberries, pineapple

Try to have a variety of FF Dressings...FF Italian,
Kraft FF Ranch Peppercorn, FF Blue Cheese,
FF Thousand Island, FF Asian Ginger etc.
The choices out there now are almost unlimited.
This way you all get to taste 4 new kinds of dressing each month
to see what you like, but only have to buy 1 bottle.
OR
You can make your own FF French Dijon Dressing by using any
ordinary French dressing recipe and substituting the
oo (olive oil or oil) with a FF mayo/pepper juice & water mixture
for the of oil
i.e... 1/2 c oil would be...
1/4 c FF mayo,
1 T juice from jar of roasted red bell peppers
2 T water
whisked together. Chill

15 Bean Soup in a bag

Hi Folks,
Well my sister's kids and grand kids have all left her. Her knee is still swollen like a mellon, she's gained 4 lbs (mostly water I'm sure, as she tells me she's been really good on eating), and now her grand kids have done something to her computer so she can't get onto the internet.

So here's my last letter to her:

The dry packet of "15 Bean Soup" I sent you in the last dry box, makes a fantastic soup whether you follow their directions or not. I just soak the beans overnight, drain, rinse, cover with 6 cups of water, simmer 2 1/2 hr, then add the flavor packet for the next 1/2 hr of cooking...

When you add the flavor packet, you can also dump a big can of ch tomatoes, w juice, and 1 big onion, diced into the pot for the remaining 30 minutes and you have another great soup.

I know you hate to cook, but this is SOOOOO simple... just soak, drain, simmer, dump, chop an onion and the stove does all the rest. And it is SOOOOO good and good for you.

If your big store in PA doesn't carry it and you like it, I'll send a packet in each dry box shipment. You can add other things also: carrots or other veggies that are just about to go bad

3 rd Cooler of Meals

Well, your third cooler is on its' way. It should arrive April 17. I enclosed a list of dinners, but as usual, some things got left out and some things were added. So here's the real list. This is the last of the Thanksgiving dinners that are not packed individually. I have another set of 8 with each part of the meal in it's own container so it isn't all mushed together.

Answer for 4 Bites

Hi Salad Man,

Have you ever had a great dinner in front of you and can't wait to dig in? That first bite tastes fantastic, so does the 2nd and 3rd. But after the 4th bite, even though it is still great food, it doesn't have that satisfying impact of those first few bites. But you go ahead and finish anyway, because it is still soooo good, thus adding way too much fat and calories to your 'slip up'.

Well, the "4 Bite" diet is based on that premise. If you are trying to lose weight and you've been so good, it seems like forever, but you're just craving that certain food or snack that is NOT on your diet plan, there is a way to satisfy that craving without demolishing your diet.

First drink a large glass of water, tea, etc. Then just savor "4 Bites" of whatever it is that you've been dieing to eat...and STOP!!! Put the rest away or better yet, only prepare 4 bites so you won't be tempted to eat more.

A word of caution...a bite is a bite is a bite!!! Cramming your mouth over-full is not ok and defeats the purpose. Take normal bites, slowly, so you can enjoy each to the fullest .

Now, 4 bites will not fill you up. Always have something else ready to eat that is good for you, so you can fill up on it.

If you are going to take these "4 Bites" in a restaurant, be sure of 3 things: Order plenty of healthy food along with the item you are craving; Drink plenty of water or tea while waiting for the food to arrive. Go with a friend that will take the item away from you after your "4 Bites" and put it in a doggy bag. This way you'll have it for the next time you are craving it.

Oh what we go through to lose those unwanted pounds. But remember...it's well worth it if it improves our overall health.

Anyone ever heard of the tootpaste diet? Any time you get a craving, you brush your teeth. It seems, people don't want to eat right after brushing, (Maybe they know it won't taste as good because of the lingering 'tootpaste taste'). It seems like swishing with mouthwash...the really strong stuff...would do the same and be easier on the gums.

Sending Frozen Meals Answer

Hi Skinny Soon,

I learned a lot from the meals I sent in the first cooler. I won't bore you with what was wrong, but here's how I do it in case someone wants to do the same.

I only cook things 3/4 the way, so heating them up doesn't end up overcooking them.

I bought a ga-zillion glad ziploc sandwich bags. I freeze the meat separately (sometimes in broth except for things like meatloaf which would get mushy), veggies separately, almost always in broth, gravy in it's own bag with directions to simmer on stove, stiring well (frozen gravy doesn't nuke well). I always squeeze out the airbefore zipping shut and laying flat in the freezer.

Mashed potatoes don't freeze well (the texture comes out wierd on the other end) so she makes fresh FF mashed pots when they are the only starch that would go well with that particular dinner. I'll give the recipe again at the bottom of this post.

If pasta is the perfect starch for the meal, she makes whole wheat pasta that she buys at the big grocery store in the city 1 hour away.

I make big batches of brown & wild rice and freeze in individual bags after it has sat overnight in the fridge. This helps keep the rice separate so it doesn't mush together.

When frozen, I pack the 2 or 3 bags that make a complete meal in a plastic grocery store bag, write the meal name on the bag in big magic marker and store in freezer.

As you might already have figured out, casserole dishes turn out really well.

Once a month I pack 30 meal bags in a very thick styrofoam cooler (including a list of all 30 meals), tape it shut, shrink wrap it VERY well and ship it UPS 3 days. As she lives out in the boonies, it just does make it in the 3 days, and everything is rock solid when it arrives. The shipping is $140 because it goes from Florida to the West Coast.

All she has to do is thaw a meal completely, and prepare according to directions I have given her. She hates to cook, so this keeps her out of restaurants and fast food joints. Except for breakfasts. She takes care of our mom, and mom wants to eat out every morning. She eats oatmeal before she goes, so she only has dry toast and fruit (when she doesn't give into the great smells of others' breakfasts). She has promised me though, that after her knee heals, and she can start working out in her yard, she will stop the restaurant breakfasts and make them each a Liquada for breakfast (recipe at end of post).

Fat Free Mashed Potatoes
Peel potatoes and cube, boil 'til well done, drain, mash with s & p and just a little skim milk.

Liquadas (I call them liquid ahhhhs :~) )
Basically they are just fruit milkshakes
Blenderize a banana, frozen fruit, real vanilla extract, splenda or Stevia, and either skim milk or FF yogurt(plain or vanilla or matching fruit flavor) & OJ, depending on the fruit you are using.

Some Salad Recipes

While my sister is recuperating from knee surgery and doesn't feel like e-mailing me (she doesn't like the computer much anyway) I'll give you guys some salad recipes.


Bean Salad Recipe
1 c FF Italian Dressing-------------------------- ----------------------------1 t ea salt p pepper----------------------------------------------------------
1/2 c splenda or use stevia to tastse--------------------------------------
16 oz can ea french green beans, tiny peas, tiny corn, drained----------
1/4 c roasted red bell peppers, ch-------------------------------------------
1 c celery, ch---------------------------------------------------------------
1 ea red onion, gr pepper, ch------------------------------------------------

Combine all, chill overnight, drain. Save dressing in case you need to add or pass when serving.



Veggie Toss
The dressing is FF or you can substitute FF Ranch
10 baby carrots, halved lengthwise drop in boiling water 1 min---------
1 c asparagus, 2" pcs--------------add for 2 min----------------------------
1 c snap peas, snipped----add 1 final min or 'till all are tender crisp drain, chill-
1 cucumber, halved lengthwise, sl thin---toss w cooled veggies above
6 c mixed greens on 4 plates, top w tossed veggies----------------------
For Dressing, blenderize the following and drizzle over-------------------1/4 c lf buttermilk-------------------------------------------------------------
1/4 c FF mayo----------------------------------------------------------------2 t cider vinegar or more as needed----------------------------------------1 t Dijon mustard-------------------------------------------------------------S & P---------------------------------------------------------------------------2 T ea....chives, dill, optional---------------------------------------------- Even if you can't find buttermilk labeled low fat, regular buttermilk only has 2 g per cup, so it already is low fat.

Wow is it ever difficult to post recipes on this blog...spaces don't seem to register...you have to put in dashes in order to skip spaces and/or go to the next line.----------------

Marinated Salad1/2 c splenda or to taste combine well-------------
1 t celery seed----------------------------------------------------------------
1 c white vinegar-------------------------------------------------------------
1/4 c water-------------------------------------------------------------------1 t salt
1/2 t black pepper------------------------------------------------------------
2 c cucumbers, halved, thinly sliced-----------------------------------------
1 onion, sl into thin rings then quartered----------------------------------
2 c carrots, thinly sliced ----------------------------------------------------
1/2 c celery, diced ------------------------------------------------------------

Combine, chill several hours or overnight. Drain

Hi Skinny Soon

Love the name.
I fix her meals that are both low fat and low cal. She is a true pasta lover, but when she does eat carbs, I have finally gotten her to only eat whole wheat pasta, whole grain bread, whole grain brown rice (I have to fix it and send it to her...SHE HATES TO COOK), no sugar (she uses splenda or stevia).

She can't exercise until her knee operation heals, that's why the weight loss is only 16 lbs in 12 weeks.

Her girls are out visiting this week, so I have only heard from her once so far. I'll send out some recipes in the next post, to fill in until they leave and she comes back on line.

To those who have just joined.

If you have just joined, please read the very first blog in the archives named "Explanation"
It will go a long way let you know what you might find here. Right now I am helping my sister lose weight, later, after she suceeds, who knows what we will talk about. Whatever you guys want, I guess.

If you are trying to lose weight or know someone who is, read all the archived letters starting with the one in February. (I went back and tried to group them to make it easier) and/or send this blog address to them. There will be tips, recipes, motivating responses, tricks to kick-start your metabolism.

And yes, I do remind her quite often how important it is to have a daily bm, but I haven't totally convinced her yet. At least she is trying. I just have to keep her focused on all the tips I've given.

To date the weight loss is 16.2 lbs. She has a long way to go, but is really determined.

Dinner Out...or In

%&$&# ! ! ! ### this morning. I'm so disgusted I could vomit ! ! !

For bkfst I had my usual. For lunch I had a turkey sandwich on whole wheat with mustard, lettuce & tomato. For dinner I had chinese with 3 friends. While they ate fried rice, battered shrimp and sweet/sour chicken I had white rice and 2 vegetable dishes. One had hoisin sauce in it but I don't think that has much fat. The other vegie dish was clearly steamed with a clear sauce. Maybe the vegies with hoisin was wok fried and had some fat. I had at least 10 waters.

I think I had a big bm yesterday but it must have been the day before which helped to account for the ### weight. I'm eating prunes 2-3 in the am and pm every day.

This am I've had 4 prunes and my tea. Mom and I will go to bkfst and I'll havae dry toast and orange. Going to PA today to get drop Mom at the "home" and I'll take loads of carrots, water and my 1/2 pbj sandwich.

I'll either have the other xmas bird or the leftover speghetti tonight.

My friends and I have decided to do this chinese thing every once in a while. The next time I'll have just white rice and the vegie dish that was steamed. I'll check with the restaurant about how it was prepared. Or do you have an alternative? I guess I could have brought your teraki ckn. Or made my own stuff so I could be sure of what was in it.

I just realized I did not eat throughout the day like I usually do. I was bush all day running around town and had a contractor walk around the houses with me to get an estimate for residing.

I felt like I was being so good last night to give up the fattening stuff.
I don't even what to talk about this today.
I'm just so so disappointed.

I don't know what to say except please hang in there. I know it is difficult and I know your are dissapointed. And no you don't have to take my teriyaki chicken out to dinner...I don't think they would appreciate that.
If anything your body thinks you are starving it and is hanging on for dear life to everything you give it. That's the reason for eating every 2 to 3 hr. I'll have to get you a watch that dings every hour...one ding and you drink water, next ding you eat, next ding you exercise...ooops I said the "e" word.
It's a good idea to ask how their food is prepared, especially if you plan to eat there with your friends again. The rice probably had butter in it and they will not change that because they probably make 20 servings all at one time. You could take a packet of my brown rice and a packet of wild rice (heated up at home) and just say you'd like steamed veggies. Then you add the hoisin sauce, or sweet & sour sauce or or soy sauce (all are ok in small quantities) The trick is to avoid the sesame oil & peanut oil which gives Chinese food it's distinctive flavor...1 T of either is 6 g of fat and none of their stir-fried veggies will come without it. And remember, white rice is not too good for you even if it was plain.

But here's an even better idea. I'll send you 4 chinese dinners next time and you can have them over for dinner (I will not pack it the same way as last time because the rice dried out. In fact, I have 4 Hawaiian Chicken dinners already frozen I can send in the next cooler. I'd much rather do that. I could do something like that each month and they'd get a free meal. All you'd have to do is heat the sauce and chicken (each packet has 1 breast & plenty of sauce), warm up the brown rice. You could even buy a bag of frozen chinese veggies (or broccoli) and toss it in a steamer basket for a side dish. A dinner fit for a King. This early in the game ( I know it seems like it's NOT EARLY AT ALL), it's not fair to you to make you watch & smell what your friends can eat and you can't. And I could do a different 'foursum' meal each month. I have 4 Thanksgiving dinners (packed correctly this time) frozen also...no mashed potatoes but with baked sweet potatoes with coconut cranberries.

Do any of them need or want to lose weight? If not, those that don't could order take out and bring it to your house. What time does ma go to bed? Or you could plan it while she is in the home. Let me know if you want me to send 4 Hawiian Chicken Dinners
I am sending you more Acai Berry and also Acai Berry Detox. I also take a little pill called 'Serinity' and it may help you with ma. I'm also sending you a handy little veggie slicer to make it easier for you to make salads. You could have a Salad Bar Party. I've got some great ideas for that.

Wow! ! ! Thank you so much for being so understanding and thoughtful about the meals. Yes ! ! ! But only send 2 Hawaaian Ckn dinners. We bought 2 dinners and 2 vegie plates last time and we had tons left over. All are as big or bigger than me and do need to lose weight. They didn't eat much but maybe it's because they didn't want to pig out in front of each other. I don't know. But 2 dinners would be great. What we do is take them out to another friend's house who is unable to walk because of an injury. We are doing this until she gets her leg well.

Actually tho it wasn't hard to watch them eat the fattening stuff. I wasn't that fond of what they were eating except for the fried rice. But I didn't even mind missing the fried rice. I was so determined to do good. But somehow I blew it.

OK, only 2 bags.
I'll send 2 bags of Hawaiian Chicken (each bag contains a breast half in LOTS of sauce ) & I'll make Guilt Free Fried Rice and send enough of that for 4. But you'll still need to steam a bag of frozen Chinese or Oriental veggies (or they may be labeled stir-fry veggies) and a bunch of frozen broccoli or broccoli & cauliflower mix. You can toss a small can of sliced mushrooms into some soy sauce (has no fat) and dump them on top of the broccoli before steaming.

After steaming the oriental veggies, toss them while hot with 2 teaspoons (notice I spelled that out) of sesame oil. The flavor is VERY strong and 2 t is only 4 grams of fat for all of 4 people.

Have each lady bring a bottle of some type of oriental sauce or ingredient...i.e. duck sauce, hoisin sauce, fish sauce ( have them check the fat content), cans or bottles of tiny baby corn (it has no fat), sl water chestnuts (has no fat), bean sprouts ( has no fat), edammame (it has little fat) to serve on the side or toss in with the veggies or broccoli or GFG fried rice.

Other ideas:
You could steam up a box of snow peas...toss with 1 T of hoisin sauce and a T of sesame seeds

I love this tiny side salad: 1/2 c White or Rice Wine Vinegar & 1/2 c water, 1 t sesame oil, cucumbers, green onions, thin sliced radishes, cherry tomatoes(halved or quartered). Chill 2 hr.

YEEESSSSSS Water Works

I drank about 12 glasses water yesterday. ### this am. Yea ! ! ! that's a new low. Now I just need to hold on to that. I'm going out to bkfst w/a friend. I've already had mine. I'll just have coffee and orange slices.

Stress & toxins = Weight Gain

### this am. I'm disgusted. I question the scales. I did everything I was supposed to yesterday except shit. I eat about 5 prunes a day and did yesterday (some in am and some in pm) . I'm just not eating enough to go every day. The day before yesterday the bm was very small.
I even feel lighter.
Had 1015 cal and 15 g fat yesterday. Had 2 ff hotdogs last night.

Truth is that bkfst is the best meal she eats all day and I don't want to cook a big bkfst for her. When she isn't here, I don't go out.

Back off a little. In order not to disappoint you or myself, I only ate one slice of fr toast and an orange. I've calmed down a little now but last night and this morning I was just soooooo mad. Not any special thing, I'm just mad at her all the time.
Part of my problem is my reaction to Mom. I'm still trying to please her. I realize now that that's the way I've always been with men. Doing anything to please them, then resenting the hell out of them because I give in - - even something as simple as getting out of the bathroom when they want in.

My learning experience continues but I don't know if my health can stand it. Was seriously considering giving up and putting her in a home. I spent some time out in the yard this am and that helped. My knee is keeping me from doing things I need to do for myself like working in yard, walking in woods, walking on beach and right now my life seems to center around Mom and I resent the hell out of that.
Bitch, Bitch, Bitch.

Today ### I did everything right yesterday except control my anger at Mom. I guess 1/2 lb is not too bad considering how mad I was at her.
I did sing your song and you're right it helped but my problem is that she is right here and I see her when I finish the song and get all angry all over again.
I'm going to try to look at this as a job for which I'm paid and she is a person named H - not my mother.
I'll have either the speghetti squash tonight or the other stuffed ckn bird. The steak was good by the way.

Also I forgot to tell you, when you have those angry days, be extra sure to drink LOTS of water. Stress creates toxins in your system and lots of water helps get rid of them so they do less damage.
That sounds like that will work.
Be sure to take a lunch break and several (coffee x'd out replace w green tea breaks) or you might get in trouble with the union. And you can report all harassing behavior from her to me.

I worked out in the yard yesterday and I'm feeling great ! ! ! ! Did more than I thought I could and more than I have before. About a week ago I did a little bit and my knee killed me. Yesterday, two guys planted 7 trees and a few small nandinas and ferns. I just had to direct and walk around a bit but that usually kills my knee.

I don't believe in this but a friend in Calif is "doing" Reiki for me every night and I swear it's working. It's some kind of holistic medicine thing which involves concentrating on me and my injury.

Got a busy day today. Breakfast w/mom and a friend at 10:00. Mom's permanent at 11:30 while I go shopping and a contractor at 1:00 to inspect my houses and tell me how much to fix some siding that's rotted. Then I'm going to work in the yard some more - just easy small stuff. Isn't it funny how we turned out? You love to cook like mom and I love to work in yard like Dad.
