While my sister is recuperating from knee surgery and doesn't feel like e-mailing me (she doesn't like the computer much anyway) I'll give you guys some salad recipes.
Bean Salad Recipe
1 c FF Italian Dressing-------------------------- ----------------------------1 t ea salt p pepper----------------------------------------------------------
1/2 c splenda or use stevia to tastse--------------------------------------
16 oz can ea french green beans, tiny peas, tiny corn, drained----------
1/4 c roasted red bell peppers, ch-------------------------------------------
1 c celery, ch---------------------------------------------------------------
1 ea red onion, gr pepper, ch------------------------------------------------
Combine all, chill overnight, drain. Save dressing in case you need to add or pass when serving.
Veggie Toss
The dressing is FF or you can substitute FF Ranch
10 baby carrots, halved lengthwise drop in boiling water 1 min---------
1 c asparagus, 2" pcs--------------add for 2 min----------------------------
1 c snap peas, snipped----add 1 final min or 'till all are tender crisp drain, chill-
1 cucumber, halved lengthwise, sl thin---toss w cooled veggies above
6 c mixed greens on 4 plates, top w tossed veggies----------------------
For Dressing, blenderize the following and drizzle over-------------------1/4 c lf buttermilk-------------------------------------------------------------
1/4 c FF mayo----------------------------------------------------------------2 t cider vinegar or more as needed----------------------------------------1 t Dijon mustard-------------------------------------------------------------S & P---------------------------------------------------------------------------2 T ea....chives, dill, optional---------------------------------------------- Even if you can't find buttermilk labeled low fat, regular buttermilk only has 2 g per cup, so it already is low fat.

Marinated Salad1/2 c splenda or to taste combine well-------------
1 t celery seed----------------------------------------------------------------
1 c white vinegar-------------------------------------------------------------
1/4 c water-------------------------------------------------------------------1 t salt
1/2 t black pepper------------------------------------------------------------
2 c cucumbers, halved, thinly sliced-----------------------------------------
1 onion, sl into thin rings then quartered----------------------------------
2 c carrots, thinly sliced ----------------------------------------------------
1/2 c celery, diced ------------------------------------------------------------
Combine, chill several hours or overnight. Drain
